Preparation
- Using a little of the oil cook the beef until all the water is cooked out of it. Add the rest of the oil and onions and cook for 5 minutes over medium heat. Add the flour and cook until all the oil is absorbed. Add the stock and over low heat, bring to a simmer. Whisk to remove all flour chunks. Cover and cook on low for 20 minutes. Add the remaining ingredients and remove from the heat. Portion and add flavors as needed.
- Put into a shallow pan with plastic wrap on the bottom and freeze completely. Once frozen cut into desired shapes and refreeze.
- Breading: predust, batter, predust, batter, bread. Cracker meal as predust. Batter as egg & water. Bread is small JBC.
- Recon: 325ºF fryer for 3 – 3.5 minutes.
