Our process consists of burning sawdust (a byproduct from the lumber industry) from wood of chips such as apple, cherry, hickory, oak, mesquite and maple just to name a few, in smoke generators and capturing the components responsible for flavoring and browning food in purified water. The non-desirable parts of smoke, such as the tar and creosote, are not water-soluble and, thereby, left out of the condensed smoke.

Our overall process generates significantly less undesirable compounds than are produced by traditional smokehouse generators. In comparison to traditional smoke used in meat plants, condensed natural smoke:

  • Recycles over 99% of the charcoal and tar from our process as energy in our plants;
  • Reduces water consumption used while smoking and for clean-up by 50%;
  • Reduces air emission by approximately 80%;
  • Reduces energy consumption by approximately 33%;
  • Uses approximately 75% less chemicals for clean-up;
  • Significantly enhances the air quality within the working environment.

Red Arrow manufactures condensed natural smokes without using chemicals. We use only heat, water and filtration. It is a completely natural, sustainable process.
