As a result of understanding smoke chemistry, we focus on the collection of these smoke components that are truly needed to provide smoke color and smoke flavor to food and meat applications. Revolutionary changes in the manufacturing process of Condensed Natural Smoke™ have resulted in products that no longer have medicinal and bitter taste characteristics of the smoke flavor produced 20 years ago. Today’s Condensed Natural Smokes™ are much more refined and reflective of traditional smoke.
Processors utilizing Red Arrow’s Condensed Natural Smokes™ experience significant reductions in their environmental impact and enhance sustainability.
- Processors will greatly decrease their emissions. Smoking with Condensed Natural Smoke™ can decrease particulate matter and VOC’s (volatile organic compounds) by over 80.0%.
- Smoking with Condensed Natural Smoke™ can reduce the need for chemical detergents in cleaning smokehouses by as much as 75.0%.
- Condensed Natural Smoke™ reduces energy requirements. This is done by reducing natural gas and electricity consumption through shortening smokehouse process cycles. In addition, the energy used to run smoke generators, scrubbers and afterburners is significantly reduced, as is the case of using the combination smoking process, or eliminated all together.
- Using Condensed Natural Smoke™ reduces water consumption and the amount of energy used to create hot water in clean-up of smokehouses.
As a result, Condensed Natural Smoke™ is a more cost-effective option than traditional smoke taking into account a processor’s cost of the Condensed Natural Smoke™. In addition to these considerations, Red Arrow’s Condensed Natural Smoke™
- Utilizes sawdust that is a byproduct of the lumber industry. Trees are harvested under managed forestry programs ensuring a healthy forest is maintained and new tree growth is promoted.
- During wood pyrolysis, large quantities of solid, liquid and gaseous byproducts are generated. Red Arrow utilizes these clean, renewable sources of energy to the fullest extent possible. Drying of wet sawdust, process steam generation and space heating needs are fulfilled in both Rhinelander and Manitowoc production locations. These sources supply about 70% of the combustion energy requirements of production. In addition, charcoal is sold to a local utility company to substitute for coal for local electrical production and wood tar is sold to a local paper supplier to burn as a fossil fuel replacement.
