Creating a savory experience

Red Arrow’s spraying system was developed for the rapidly growing pre-fried bacon industry. This system includes the spraying of Condensed Natural Smoke™ onto bacon slices immediately prior to the bacon being pre-fried. This process can also be utilized with browning agents and many other applications to provide the operator with higher yields. This process provides the processor with the following advantages:

  • Increase in #1 slices.
  • Yield enhancements, with increased impact if the bacon is sold by the pound with slices and bits.
  • Smoke flavor can be tightly controlled and easily adjusted.
  • No labeling requirements due to it being a pre-fried application.
